Introduction
Let me introduce myself: I'm Thomas, the owner of Restaurant Mitts in Amsterdam Oost, where I embarked on this adventure in 2019.
At Mitts, we make everything ourselves—except the bread. Unfortunately, our current location is simply too small for that. To change this, we’ve been searching for a new space large enough to bake bread daily for both Mitts and our new location, Papillon. We’ve found the perfect spot in Amsterdam Noord, at Papaverweg 38.

At Mitts, quality is at the heart of everything we do. This is reflected in our food, our service, and the well-being of our staff. Our efforts have paid off: we’ve earned nearly 700 Google reviews with an average score of 4.7. Now, we’re ready for a new challenge!
What's Next
We’re bringing the same passion and hospitality to Amsterdam Noord with Papillon. Here, you can enjoy the best pita bread, flatbreads, and focaccias from our own bakery, along with dishes prepared over an open flame for an authentic taste. Quality and authenticity are our top priorities. Our bakery will be large enough to provide fresh bread for both Papillon and Mitts.

What's the Plan?
The East Mediterranean cuisine is underrepresented in Noord, and with Papillon, we aim to change that.
Our location will have two parts:
A DELI where you can grab a quick bite or take away from our special street food menu.
A restaurant area where guests can enjoy a warm atmosphere, excellent service, and high-quality dishes.
Additionally, our kitchen will feature a small bakery where we’ll bake fresh bread for both Papillon and Mitts.
